Spicy Brinjal Curry

This is a spicy, colourful and gravy Brinjal curry. It has got a unique flavour by adding roasted peanut powder. Looks perfect and can wonder your guests by serving this with rice or chapathi's as a side dish. This can be prepared quickly, and also with the ingredients which are available at your pantry. Let's see the recipe....





All you need: A microwave safe bowl, A non stick pan, spatulla.
Serves- 4 people
Preparation time: 25mts

Ingredients:
1. Brinjals- 8 to 10 medium(Desi brinjals)
2. Roasted pea nut powder- 1 cup (Coarsely ground powder)
3. Salt- to taste
4. Chilli powder- 1tbsp
5. Oil- 1tbsp
6. Onions- 3 medium
7. Lemon juice- 1tsp
8. Corinader leaves- 2tbsp (chopped)
9. Daniya nad cumin powder- 1tsp each
10. Garam masala powder- 1tsp
11. Ginger and garlic paste- 1tsp
12. Water- as required
13. Turmeric- pinch
Preparations:
1. Wash and chop the onions very finely.
2. Wash and chop the brinjals into long and thin slices. Microwave them into a microwave safe bowl by sprinkling little water for 5mts and give 3mts standing time.
3. Chop the coriander leaves.
4. Roast the peanuts, cool them and grind them into coarsed powder.
Method:
1. In a mixing bowl, add finely chopped onions, salt, chilli powder, turmeric, garlic and ginger paste, lemon juice, roasted pea nut powder, garam masala powder and mix well.
2. Heat oil in a non stick pan, add the spice mixture, stir well and cook abt 3mts, by ocassionally stirring after every minute.
3. Add some water(1cup), mix well, cover with lid and cook till the raw taste of onion and ginger paste leaves and onions looks transparent.
4. Check the seasoning. Add the microwaved brinjal slices, stir well, cover with lid (add any water if required), and cook abt 3 to 4mts. Till the gravy is little thickened and the brinjal slices gets the flavour of all the spices.
5. Once it is done, turn off the stove, let it rest for 5mts.
6. Open the lid, garnish with chopped coriander leaves.
Now the dish is ready to be served.
