Talimpu Annam (Simple Fried Rice)
















Talimpu Annam is made of left over rice. It does not have any purticular procedure to make it. The process varies from person to person. Basically it is a variation to the lemon rice or fried rice. It is made of whatever ingredients available at our home. Basically "Talimpu" means seasoning with all basic ingredients. In childhood I never used to eat any vegetables, so my mom used to make this rice which makes me to eat and feel hungry.

Here is the recipe for it:
Ingredients:

Rice- 2 cups
Oil- 2tbsp
Onion- 1 medium
Tomato- 1 small
Gren peas- 2tbsp (Optional)
Corn- 2tbsp(Optional)
Green chilli- 4 no
Red chilli-2no
Curry leaves- 4 no
Cilantro- 2tbsp
Green onion- 2tbsp
Garlic, ginger paste- 1 tsp
Mustard seeds- 1tsp
Hing- pinch
Jeera- 1tsp
Channa daal- 2tsp
Urad daal- 2tsp
Turmeic- pinch
Salt- for taste
Garam masala- 1tsp
Lemon juice- 1tsp
Ground nuts- 1tsp

Preparations:

1. Cook the rice and keep aside.
2. Chp the onion, green chilli, curry leaves, ginger, garlic, green onion and cilantro, keep aside.

Method:

1. Heat oil in the pan, add hing, mustard seeds, when they crackle add jeera.
2. Add turmeric, urad daal, channa daal, ground nuts, curry leaves and fry for 1mt.
3. Add ginger, garlic paste, green chilli, red chilli, onion and fry till onion becomes soft.
4. Add tomatoes, stir well and cook till tomatoes becomes soft.
5. Add salt, garam masala powder, lemon juice, mix well.
6. Add cooked rice, mix well and let it fry about 3mts.
7. Mix well, check the salt, add chopped cilantro and turn off the stove.

If u exclude tomato, onions, vegetables and add little more lemon juice, it becomes Lemon Rice. or If u add any other vegetable then it becomes Fried rice. Hope u will try this method and enjoy the Talimpu rice.
