Spinach Stir Fry- Palakura curry

This is a simple Spinach stir fry. When you want to eat a very healthy and leafy vegetable, this is the perfect one. Spinach has a very unique taste when it is cooked. You need only few ingredients to prepare thi dish....

Ingredients:
Spinach- 2 cups
Mustard seeds- 1/2 tsp
Oil- 1tbsp
Jeera- 1/2 tsp
Turmeric powder- 1/8 tsp
Urad dal- 1tsp
Garlic- 10 big pods (U can add per your taste).
Green chillies- 2 no
Salt- to taste
Red chillies- 2 no
Onions- 1 medium
Curry leaves- 1 spring
Hing- pinch
Coriander leaves- 1tbsp chopped
Preparations:
1. Wash and chop the spinach and drain well to avoid excess water.
2. Chop the onions, green chillies, garlic into small slices.
Method:
1. Heat oil in a pan, add mustard seeds when they splutter, add jeera, turmeric, urad dal, hing and fry a minute.
2. Add curry leaves, green chillies and onions and fry till the onions becomes translucent.
3. Add garlic and fry till the raw taste goes...
4. Add chopped spinach, salt and stir well.
5. Cover with the lid and cook till the water gets evoporated, stir occasionally.
6. Check the seasoning and check whether the spinach cooked properly.
7. Turn off the stove and serve hot.
Tip:
1. You can either increase or decrease the garlic as per your taste. But garlic taste fantastic with spinach or any leafy vegetables.
2. This curry can be served with chapathi or rice or curd rice etc...
