Vaangi Bath (Brinjal Rice)

Vaangi Bath is one of the famous Karnataka Rice variety. We used to have in restuarents when we were in Bangalore. I never thought that I will try this one. But today when I was watching videos in youtube, I came across this wonderful recipe posted by Gayatri at Gayatrivantillu.com. I used to refer some of the recipes from this site. Thanks Gayatri garu for such a wonderful recipe. I thought that I will prepare this recipe for lunch today. Surprisingly it turned really wonderful and our family enjoyed the aroma and taste of it. Then I thought that this recipe should be prepared often and enjoy eating.























I have posted the pictures step by step. You just follow the same instructions and you will get a wonderful vaangi bath.
Here is the recipe for it.
Ingredients:
Rice- 2 cups
salt- to taste
Oil- 3 tbsp
Brinjals- 10 medium (desi brinjals)
Channa dal and urad dal- 2tbsp each
Red chillies- 4 no
Dry coconut powder- 1tbsp
Daniyalu(coriander seeds)- 1tbsp
Hing-pinch
Turmeric- 1/8 tsp
Ground nuts- 8 to 10 no (1tbsp)
tilnuts(Nuvvulu)- 1tbsp
Fenugreek seeds- 1/2tbsp
Cloves- 3 no
Cinnamon stick- 1/2 inch slice
Cashew nuts- 2 to 3tbsp sliced
Coriander leaves- for garnishing
Jeera- 1tsp
Onions- 2 Big
Tamarind- very little
Gasa gasalu- 1tbsp (optional)...I have not added in this recipe.
Preparations:
1. Wash and soak 2 cups of rice about 20mts and pressure cook it (Add 4cups of water to 2 cups of rice). Cool it to room tempurature and keep aside.
2. Wash brinjals, slice them into thin and long slices and put them in microwave safe bowl and add 1tbsp of oil, 1/2tsp salt and microwave it for 5mts (by mixing well after every 2mts once) and give 5mts standing time then remove from the microwave and keep aside.
3. Chop the onions in length wise and thin.
Method:
1. In a pan, add all the masala ingredients (which I have mentioned above) and fry them till they are golden brown colour(don't over cook them). and cool them and grind into coarsed powder. This is called Vaangi Bath powder.
2. In a pan, heat 2tbsp of oil, add jeera, hing, tumeric, sliced cashew nuts and fry a minute.
3. Add finely chopped onion slices and fry till they are translucent.
4. Add microwaved brinjals, add salt and cover with lid and cook abt 3mts.
5. Stir well and add the spice powder(vaangi bath powder), mix well and cook abt 2mts.
6. Now add cooked rice, mix all together, cover with lid and cook abt 3mts so that the rice will get the flavor and aroma of spices and brinjals.
7. Turn off the stove and garnish with coriander leaves.
Now the yummy Vaangi Bath is ready to be served. It really reminds me the days of Bangalore.
Tip: Serve this with onion raita or plain curd or any paneer dish.
