Dal Makhani


















Dal Makhani is a mouth watering dish. Its a north Indian variety. From long time I thought of preparing this dish. Actually this dish can be prepared when you invite someone for lunch or during party times etc, because it taste great, very easy to prepare and looks special. It can be prepared in various methods. Today I am preparing in a nutritious way. If you are diet conscious you can also prepare this dish without adding ghee or butter. Here is the recipe for it.

Ingredients:
Whole urad daal- 1 cup
Rajma(Kidney beans)- 1/4 cup
Salt- to taste
Chilli powder- 1 tsp
Green chillies- 2 no
Curry leaves- few
Turmeric- 1/8 tsp
Garam masala powder- 1 tsp
Daniya powder- 1tsp
Cumin powder- 1 tsp
Ginger, garlic paste- 1tbsp
Amchur (dry mango) powder- 1/2 tsp
Cilantro- 1/4 cup
Onion- 1 medium
Tomato- 1 medium
Curd- 1/2 cup
Heavy whipping cream- 1/4 cup (Optional)
Butter or ghee- 3tbsp
Jeera- 1tsp
Red chillies- 2 no
Cloves and cardomon- 3 each

All you need- A Indian rice cooker, steel spatula and masher.

Preparations:
1. Wash and soak both whole urad daal and rajma together for overnight or atleast 8hrs of time.
(Don't drain the water. It is very nutritious if you use the same water for boiling the daal).
2 Wash and chop the onions, tomato, green chillies, ginger, garlic, cilantro and keep them aside.

Method:

1. Heat butter or ghee in a cooker, when its hot, add cloves, cardomom and fry a minute.
2. Add ginger, garlic paste, green chillies and fry for 1mt.
3. Add chopped onions and tomato slices, stir well and fry till they become soft.
4. Add chilli powder, salt, garam masala powder, daniya and cumin powder, amchur powder, add little water and cook for 3mts.
5. Now add the soaked daals including water, mix well, close the cooker lid and cook till 3 vissles.
6. Once the pressure is released, turn on the stove, mash the daals well with a masher. The daal should be tender but not mushy. Cook again for 8mts.
7. Add curd and whipping cream, check the salt, cook for 2mts and turn off the stove.
8. Seasoning: Heat 1tsp of butter in a different pan, add jeera, turmeric, red chillies and curry leaves and fry a minute. Now add this to prepared dal makhani and mix well.
The tasty Dal makani is ready. It can be served with naan, chapathi, paratha also with rice. It can be preserved abt 3 days of time by storing in the fridge.
Note:
1. The whipping cream and ghee or butter are optional. U can also use regular oil.
