Beans and Carrot curry with grated coconut










This curry has a special flavour since we add grated coconut to it. Also this curry looks very colourful. Most of the people likes to have the carrot as it is, but most of them does not like any curry made of carrot. For them this curry is good, because it also has beans and coconut flavor.

Ingredients:

Mustard seeds- 1 tsp
Jeera- 1 tsp
Urad daal- 1 tsp
Hing- pinch
Turmeric- pinch
Onion - 1 medium
Green chilli- 2 no
Garlic- 4 no
Curry leaves- 4 no
Coriander leaves- 2 tbsp
Beans- 1 cup
Carrots- 1 cup
Grated coconut- 1/2 cup (as per ur taste)
Salt- for taste
Chilli powder- 1/2 tsp
Daniya powder- 1 tsp
Garam masala powder- 1 tsp(optional)
Oil- 1 tbsp
Lemon juice- 1 tsp(Optional)

Preparations:

1. Wash, peal and chop the carrots and beans into small slices, put them in microwave safe bowl, sprinkle some water and microwave it abt 7mts. So that they will be 80% cooked, remove them and keep aside.
2. Chop onion, green chilli, corianer, garlic and keep aside.

Method:
1. Heat oil in the pan, add hing, mustard seeds, when they crackle, add jeera.
2. Add urad daal, curry leaves, turmeric powder, fry for 1mt.
3. Add onion, green chilli, garlic slices fry till onion becomes litttle crisp.
4. Add beans and carrots to it, salt and mix well and cook abt 4mts by stirring inbetween.
5. Add chilli powder, daniya powder, garam masala, lemon juice and mix well.
6. Add grated coconut, coriander leaves, mix well and switch off the stove.

Note:
1. U can add coconut as per the quantity of beans and carrots.
2. Serve this with either chapathi or rice.
