Instant Dosakaya Chutney(Cucumber chutney)

Dosakaya Chutney is a Instant chutney which can be prepared in very less time. When no vegetables are available at our kitchen, we always think what to prepare. So this is a very simple one, which can lost for 5days by storing in Fridge.








Ingredients:
Cucumber- 2 small
Mustard seeds- 4 tsp
Jeera- 3 tsp
Urad daal- 2tsp
Turmeric Powder- Pinch
Curry leaves- 5 no
Coriander leaves- For the taste
Salt- for taste
Oil- 3tsp
Hing- Pinch
Red chilli- 2 no
Chilli powder - 3 tsp
Ground nuts- 2tbsp
sessame seeds- 2tbsp
Fenugreek seeds-1tbsp
lemon juice for taste

Preparations:
1. Dry roast the pea nuts and sessame seeds separately, cool it . Blend them and take a fine powder, Keep a side

2. Dry roast the fenugreek seeds, Jeera(1 tsp), Mustard seeds(2tsp), cool them, Blend till fine powder.

3. Peal the Cucumbers, Chop them into small slices.

Method:
1. In a bowl, take the cucumber slices, add roasted pea nut and sessame seeds powder, fenugreek ground powder, salt, chilli powder, lemon juice, coriander leaves, turmeric powder and mix properly.

2. Seasoning: Heat the Oil in the pan, add mustard seeds, when they crackle add Jeera, hing, turmeric powder, Red chilli, curry leaves, urad daal and fry them for 2 mts.

3. Add the seasoning to the Chutney, give a proper mix.

4. Check the salt and chilli powder. Add it if it is necessary. Now the chutney is ready to serve.

This is instant one but very tastier one.
