Mixed Vegetable Curry






Mixed vegetable curry is healthy and nutritious food. Kids does not like to eat vegetables, so if u prepare this kind of dishes, all the vegetables will be cooked together and taste more good than general curries. It goes well with rice, chapathi or paratha. There is one more advantage with this kind of curries, sometimes the quantity becomes more, so we will be confused what to do with remaining curry. That time its very simple, we can make mixed veg paratha by filling this left over curry in paratha.
Ok..Here is the recipe for it..

Ingredients:
Finely chopped vegetables (Potato, capsicum, spinach, carrot, beans)- 1cup
Green peas- 1/8 cup
Corn- 1/8 cup
Mustard seeds- 1 tsp
Jeera- 1 tsp
Urad daal- 1 tsp
Hing- pinch
Turmeric- pinch
Onion - 1 medium
Green chilli- 2 no
Garlic- 4 no
Curry leaves- 4 no
Cilantro- 2 tbsp
Salt- for taste
Chilli powder- 1/2 tsp
Daniya powder- 1 tsp
Garam masala powder- 1 tsp(optional)
Oil- 1 tbsp
Ginger- 1 tsp
Red chilli- 2 no
Grated coconut- 3tbsp (Optional)

Preparations:
1. Wash and chop the onion, green chilli, ginger, garlic, curry leaves, cilantro and keep aside.
2. Wash, peal and fienly chop all the vegetables like carrots, beans, potato, capsicum, spinach.
3. Put chopped vegetables in a microwave safe bowl, sprinkle some water, microwave it abt 8mts. (The time may vary for your microwave, basically all the vegetables should be 80% cooked) and keep aside.

Method:
1. Heat oil in the pan, add hing, mustard seeds, when they crackle, add jeera.
2. Add urad daal, turmeric, curry leaves, ginger and garlic paste, mix well and fry abt 1mt.
3. Add green chilli, onions and fry till onions becomes soft and transparent.
4. Add salt, chilli powder, daniya powder and mix well.
5. Add boiled spinach, green peas, corn, stir well and cook abt 1mt.
6. Add boiled other vegetables, mix well and let them cook abt 3mts.
7. Check the salt and spiceness, add grated coconut, cilantro and turn off the stove.

Note: The coconut will give the nice flavor to the dish, its absolutely optional one.
