Sambar- The South Indian soup








Sambar is a famous South Indian soup. It can be served with Idli, Dosa and Hot Rice.

Ingredients:
1. Toor daal- 1 cup
2. Salt- for tatse
3. Tamrind- Big gooseberry sized
4. Oil- 2tbsp
5. Hing- Pinch
6. Mustard seeds- 1 tsp
7. Jeera- 1 tsp
8. Curry leaves- 10 no
9. Garlic cloves- 5 no
10. Ginger- inch slice
11. Green chilli- 5 no
12. Red chilli- 3 no
14. Coriander leaves- for taste
15. Sambar powder- 2tbsp
16. Vegetables- 2 cups( Pealed and sliced carrots, green beans, drum sticks, Tomatoes, cauli flower, Cucumber, bottle gaurd, Brinjal, potatoes, broccoli- or any favorite vegetables)
17. Garam amsala powder- 1tsp
18. Daniya and Jeera powder- 2tsp
19. Turmeric powder- 1/8 tsp
20. Onin- 1 big
21. chilli powder-1 tsp

Preparations:
1. Wash the Tour daal and soak abt 20mts.
2. Wash and soak the tamarind, squeeze the tamarind juice and keep a side.
3. Wash, peal and chop all the vegetables in cubes.
4. Chop Onion, Green chilli and coriander leaves.

Method :

1. In a cooker, add soaked tour daal, chopped vegetables (except tomatoes and onions), pinch of turmeric and add enough water, keep the cooker lid, Cook till 4 vissles. Switch off the stove and let the steam goes off.
2. Now remove the cooker lid, switch on the stove, add daniya and jeera powder, sliced onion and tomatoes, salt, chilli powder and mix well. Let it cook abt 5mts.

3. Now add squeezed tamarind juice to it, mix well. Let it cook abt 5mts.

4. Seasoning: In a different pan, add oil, mustard and jeera seeds. When the mustard seeds splutter, add curry leaves, garlic and ginger slices( or garlic, ginger paste), green chilli, red chilli's, onion slices, fry well abt 4mts.

5. Add the seasoning to boiling sambar, add sambar powder, garam masala powder, mix well and boil abt 3mts.
6. Check the salt and Garnish with coriander leaves.

The sambar is prepared. Can be stored in the fridge abt 4days and can be served at any time by reheating as required.
