Kesari (Suji ka halwa)













Kesari is famous Sweet which can be made for every festival in Andhra. It is so simple to prepare with the available ingredients at your Kitchen.

Ingredients:

1. Suji (Upma Ravva)- 1 cup

2. Sugar(Granulated)- 1 cup

3. Water- 1.5 cups

4. Ghee or unsalted butter - 1/2 cup

5. Cashew nuts- 20 no

6. Raisins- 20 no

7. Ilachi powder- 1 tsp

8. Milk- 1cup

Preparations:
1. Heat the ghee and fry the cashew and raisins separately and keep them a side
Method:
1. Heat the Ghee or unsalted butter, add suji, roast it till golden brown colour(or raw taste goes).
2. While rosting the Suji, in a different bowl, Heat the milk and water together till a nice boil...
3. Now add the boiled water and milk to the suji, little by little, keep stirring the suji in other hand(mix well not to form the lumps). Keep stirring for every minute and cook abt 5mts.
4. When the Suji started thickening add Ilachi powder, fried nuts and measured sugar, keep stirring it very often.
5. Check the consistency and switch off the stove.
Note.
1. Use Non-stick pan to prepare the Kesari so suji won't get burnt

2. Keep stirring thruout the preparation so it wont get burnt

3. Sugar can be added more or less as per your taste

4. Any other nuts also can be added for taste

5. You can skip milk and add water instead of it.

6. Ghee cane be added more or less. preferably not to preapare the dish with Oil
