Murukulu

Murukulu is one of the yummy and crispy snack item. Everybody loves it. It takes little more time to prepare this snack, but it is really worth to prepare. Once you get used to do then you won't take much time to prepare it.





Note: We should have a Murukulu Presser(vessel) to prepare this snack. We can get it at any Indian tores. Please refer the picture.




Ingredients:


Rice flour- 2 cups
Putnala podi(ground fried channa daal powder)- 2 cups
salt- 1.5 tsp
Chilli powder- 2 tsp
Ajwain seeds- 1 tbsp
Jeera- 1 tbsp
Oil- for deep fry
Unsalted butter- 2tbsp
Turmeric- pinch
water- 1 cup or sufficient


Preparations:
1. Grind the Putnalu(fried channa daal) as a fine powder.



Method:


1. In a bowl, take rice flour, putnala powder, salt, chilli powder, ajwain, jeera, mix everything well.
2. Add melted butter to it and mix well


3. Heat 1 cup or water(or sufficient) . When the water comes to boiling stage, switch off the stove and add water little by little to the mixture and mix well.( Be careful the water is really hot. U can start mixing with the spoon then mix with hand). Make the dough as puri dough. (The dough should not be too hard or too thin).


4. Now heat the oil for frying on medium high flame, (don't over heat the oil)


5. Apply little of amount oil to the Murukulu presser surface(inside only), take the desried shaped plate, arrange in the presser, then keep little amount of murukulu mix in it, close the lid, check the heat of the oil, then press directly in the hot oil. (If you are not practiced, just press in the plate the add it to the oil).


6. Fry it till golden colour then remove from the oil. (Don't fry till brown colour, because after removing from the oil it will turn dark).

7. Put them in tissue paper, so that the excess oil will be observed by paper. The same way, when the mixture get finished in the presser, remove the lid, again apply oil, put mixture and close lid and repeat the same process.


8. Once everything is done, store it in the air tight box or a jar. It will be stored till 2 weeks of time.
