Ground Nut Chutney

Ground Nut Chutney is a good combination for Idli, Dosa and sometimes with chapathi and paratha's.







Ingredients:


1. Groundnuts (Pea nuts)- 1 cup
2. Jeera- 2 tsp
3. Garlic cloves- 5 no
4. Ginger- inch slice
5. Salt- for taste
6. Green chilli- 6 no
7. Tamrind- lemon sized
8. musturd seeds- 1 tsp
9. Urad daal- 3tsp
10. Curry leaves- 8 leaves
11. Coriander- for taste
12. Turmeric- just a pinch
13. Red chilli- 4 no
14. Oil- 1.5 tbsp


Preparations for chutney:

1. First dry roast the Ground nuts till light golden colour, cool it separately.

2. In the blender, add rosted grund nuts, salt, ginger slice, garlic cloves, tamarind, green chilli's jeera(1tsp), add enough water and grind as a soft chutney. (The tamrind can be replaced by fresh lemon juice after grinding)

3. Now the chutney is ready. Need to add seasoning.


Seasoning:

1. Heat the pan, add oil. put mustard seeds, when they start spluttering, add jeera, pinch of turmeric(also can exclude the turmeric powder).


2. Add curry leaves, urad daal, red chilli's. Fry them for a minute. Cool it and add seasoning to the chutney. Mix everything properly.

3. Check the seasoning and salt. Add freshly chopped coriander leaves(lemon juice if required). Now the chutney is ready to serve.
